It's a good recipe and is only about 300 calories per serving. Course, it wouldn't be great for people that are allergic/don't like shrimp, but I can't see why you couldn't substitute chicken for the shrimp.

Nano is also starting soon, while I'm not planning a whole novel I thought I might just try to finally finish my steampunk novel. I have no clue if I will succeed, but I figured it was worth a try.

Recently, my Mom took an old recipes of my grandma and updated and it turned out delicious!


I figured I had to share this with you guys, especially those who can't resist strawberries.

STRAWBERRY SQUARES

Graham wafer or chocolate wafer crust according to recipe on box, enough for 1 crust
Mix together. Press gently into 8 x 8 pan (glass pan is good). Put in fridge to chill.

1 pkg. or tub of (frozen) strawberries… (thawed)......in light or heavy syrup. If whole berries, cut into pieces
1 pkg. strawberry Jello (small package) do NOT add any water
1 envelope of Knox gelatin…sprinkle over all

Mix together in pot. Bring to a boil on stove…..(stir with wooden spoon)….boil 5 minutes. Set aside. Let it cool and thicken a bit.

Fold 3/4 of a thawed large tub of Cool Whip into the COOLED strawberry mixture.
Spread over the wafer base. Put in fridge.

Can frost or dollop more cool whip on top and decorate with real strawberries. Store in fridge. Cut in squares to serve.

Can double recipe for a 9 by 13 pan.

I recently tried out a new muffin recipe, lemon cornmeal muffins. They were listed in the "Healthy Muffin" section, so I'm assuming these guys aren't too bad calorie wise.

Lemon Cornmeal Muffins

Ingredients:

Oil or melted butter for greasing if using
4 lemons
3 tbsp low-fat plain yogurt*
1 1/4 cups of all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
2 cups yellow cornmeal
1/2 superfine sugar
2 large eggs
6 tbsp sunflower oil*

Directions:

Preheat the oven to 400˚F/200˚C. Grease a 12-cup muffin pan or line with 12 muffin paper liners. Finely grate the rind from the lemons and squeeze the juice.* Make up the juice to 1 cup with yogurt and add the lemond rind.

Stift in the flour, baking powder, and baking soda into a large bowl. Stir in the cornmeal and sugar.

Lightly beat the eggs in a large pitcher or bowl, then beat in the oil. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined; do not overmix.

Spoon the batter into the prepared muffin pan. Bake in the preheated oven for about 20 minutes, until well risen, golden brown, and firm to the touch.

Let the muffins cool in the pan for 5 minutes, then serve warm or transfer to a wire rack and let cool completely.

Makes about 12 muffins.

*I ended up using low fat lemon yogurt instead of plain, and I found it work just fine with it.
* I used canola oil instead and again, it tasted just fine.
*I didn't bother grating the rind, I just squeezed the juice out.

I just tried out a new low fat dessert recipe for dinner and it was a hit. It's a light coconut cream cake and each serving is 195 calories which is not bad.

In Canada this weekend is Thanksgiving and I made some pumpkin spice cupcakes. I've been dying to make some cupcakes from my Hello Cupcake! book and I finally got a chance. I still want to try making wolf cupcakes, but I'll probably do that later.

Here they are!

And they do taste like a pumpkin pie. The recipe is really easy.

Ingredients:

Yesterday, it was warm enough for 1 inch of the snow to melt. However, tomorrow we're suppose to get 10 cm and the day after 20-25 cm more.....ARRGH!!

I can't wait for spring. I like snow, but we're running out of room to put it all. We had to shovel a path for my dog in the backyard because the snow is almost pass the top of the fence. It looks like the grand canyon.

I don't even want to think how much flooding there's going to be this year. -_-; Thankfully, our house is on top of the hill, but I feel bad for the people who live near the river. That's a big worry I rather not have.

Anyway, I finally got around to posting my family's cheese fondue recipe. I've lost count how many times I've made this. My friends love it.

Well, Mom and I saw the Order of the Phoniex. It was really good. The special effects were amazing and I love Luna.

Also, got Tales of the World: Radient Mythology for my PSP. I just started it and it's very enjoy about. I was especailly happy to discover that Kratos has the same voice actor as he did in Tales of Symphonia, although, I'm sure Lloyd has a different one, but I haven't come across him yet.

I'm slowly working on some drabbles. One will be for [livejournal.com profile] slayers_request and one will be for my "15 Hugs" challenge which I haven't touched in over a year. ^_^;
